Oatmeal Lemonade Bars
Yield: 1 13x9x2 inch pan
Filling:
12 ounce package pitted pruned, chopped
6 ounce can frozen lemonade concentrate, thawed, undiluted
1 lemonade can water
3/4 cups chopped nuts
1/3 cup sugar
1/4 cup flour
1/2 teaspoon salt
Crumb Mixture:
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup butter or margarine, softened
1 cup packed brown sugar
1 3/4 cups uncooked oats
Filling:
In saucepan bring to boil prunes, lemonade concentrate and water. Reduce
heat; cook 15 to 20 minutes or until consistency of puree. Stir in nuts,
sugar, flour and salt.
Crumb Mixture:
Stir flour, baking soda and salt together; set aside. In large bowl beat
butter and sugar until creamy. Stir in flour mixture, then oats.
Press half the Crumb Mixture into greased 13 x 9 x 2 inch baking pan;
flatten. Evenly spread on filling. Sprinkle with remaining crumb mixture;
pat lightly.
Bake at 400 degrees for 25 to 30 minutes or until lightly browned. Cool
slightly in pan on rack. Cut into 36 bars and remove from pan to rack to
cool completely.
