I am pretty much a newbie to canning. I did put up some jams last year
using the inversion method (but won't again after reading this board).
Do I need to use a canning rack in my pot or can I do without?

I usually use a cake rack. The jars do need to be off the bottom so
that the boiling water can circulate all around the jars.

You can put a dish towel in the bottom of the canner and it works almost
as well as a rack.

You don't need a dedicated canning rack, just use something to keep
the jars slightly off the bottom of the pot. Cake cooling rack if
it'll fit your pot, jar rings, etc.

jars knock against each other in the pot with the water boiling? They
won't break or crack?

I've been preserving food by BWB for about 55 years now and it's never
happened to me either.

No, you do not boil them that hard. As long as they are on an even
surface they will be fine.

Generally speaking, no. The water should get a rolling boil and stay that
way, but not a *furious* boil. After it comes to a boil at my house I can
turn the heat down to about medium or so. Depending on the age and use
your jars have had, you may have one break or chip or crack during use.
This is very unusual but it is why I don't can in a tank top anymore.
