I'm using a modified picked pepper recipe on page 304 of the 3rd edition
PFB book.

I used 24 new lids and 2 old lids. 2 of the 26 half-pint jars did not
seal properly. I misguessed by 2 jars and the store was already
closed.....Sigh.....


In the PFB book there is mention about not letting the vinager simmer
too long as the vinager will boil away. Will this be a problem in the
jars? Are there any safety concerns about simply reporcessing the 2
unsealed jars?

Oops. The modification is to increase the strength of the vinager/water
solution from equal parts of vinager and water to 4 parts vinager/3
parts water.

I'm not sure if the correction made it or not. My DSL connection
"jumped" as I was sending it.

The modification was to increase the strength of the vinegar/water
mixture from equal parts of vinegar & water to 4 parts vinegar/3parts water.
