1. While blanching Veggies is a significant portion of the
nutrients lost in this process ?
2. Once blanched can the veggies be kept in the refrigerator
before dehydration ? If yes, for how long can they be kept in the
refrigerator ?

Blanching isn't cooking. The blanching process, properly done, is over
with quick and the nutrient loss should be nominal.

'Til they start to dry out, I reckon ;P
But seriously, food processing and preserving needs to be done as soon
as possible after the food is procured. Nutrient loss isn't limited to
just cooking. Nutrients can simply be lost to time, while foods sit
around waiting to be either consumed or preserved. Further, when you
start to manipulate/process foods, the process of deterioration amps up.
If you must refrigerate foods mid-preservation, wait no longer than 24
hours to get the process underway again.
