Hello - anyone out there have a recipe or knows where to find one for
an Italian pastry called Frutta di Bosca? It's a cake or pastry, split
in half, filled with pastry cream, and covered with black and red
currants, blackberries, and raspberries. Web searches keep leaving me
in the cold.

Well, you already have the recipe - just read your message above. :-)

"Frutti di bosco" is basically a wild (forest) berry mix, which varies,
not a recipe as such. There are many recipes using the mix and what you
are seeking sounds like a version of "torta ai frutti di bosco", a
fairly generic recipe. The pastry can be filled with zabaglione,
bavarese, or chantilly cream, or cream made with ricotta, etc. and
topped with the berry mix, as you describe. Below is a plausible

Myself, I'd dispense with the pastry and serve the berry mix just with
the cream, making it a kind of Rote Grütze....

Torta Frutti Di Bosco

Ingredients
2/3 cu Unsalted Butter, melted
1 1/4 cu Sugar
8 lg Eggs, separated
1 tbsp. Lemon Zest
1 tsp Cinnamon
1/4 tsp Salt
2 1/2 cu Flour, sifted
4 1/2 cu Mixed Berries (blueberries, raspberries, blackberries,
strawberries)
1/3 cu Powdered Sugar

Preheat oven to 350 degrees. Lightly spray an 11" a removable bottomed
tart pan with cooking spray.

Cream butter and sugar in a large mixing bowl. Add egg yolks, one at a
time, and continue mixing until smooth. Add lemon zest and cinnamon. In
a separate bowl, whip egg whites and salt until stiff peaks form. Gently
fold egg whites into egg yolk mixture. Fold flour into mixture until
just blended. Pour mixture into tart pan and spread evenly. Top with 3
cups of mix berries (reserve remaining berries for topping). Lightly
press fruit into mixture. Place in oven and bake for 1 hour. Remove from
oven and allow to cool. Dust cake with powdered sugar and top with
remaining fruit. Serve with ricotta whipped cream.

Ricotta Whipped Cream
Ingredients
1/2 cu Ricotta Cheese
1/4 cu Powdered Sugar
1 tsp Vanilla Extract
2 cu Whipping Cream

In small bowl, mix ricotta, powdered sugar, and vanilla until well
blended. Set aside. In a large bowl, whip cream until soft peaks form.
Add ricotta mixture and continue to whip until smooth.

I thank you, and my mother thanks you, and everyone at her birthday
party thanks you as well, I hope! She tasted it in Little Italy and
raved and raved. Clarifying that cake was the one part I wanted to be
sure of. I'll experiment a bit and see how it turns out.

I've seen the name spelled six different ways, so thank you for the
right one. Also, you just clarified Rote Gr=FCtze for me as well in one
fell swoop, so grazie and danke schoen.
