My sister and I have a great plan for Christmas...we are making our gifts
for each other...my gift for her will be FOOD. I started canning last year:
beets, mustard pickles, strawberry jam. I am looking for more canning
recipes. Any and all will be greatly appreciated.

I agree -- get a copy of the Ball Blue Book! I found mine in the
hardware store alongside the canning jars.

I've probably seen them in the same place in supermarkets. And, I'm sure the
boxes of jars probably have something about it printed on the outside.
Besides all the recipes, the book's also got lots of rules for canning
safely.

There are a number of recipes at www.homecanning.com (Ball's site). Getting
to them isn't all that intuitively obvious -- click on the Recipe tab at
top, then on Search Recipes. If you don't select a category, a list of all
the recipes on the site will be listed.
Trying this to be sure I could tell you how to do it, I found a recipe for
Apricots in Lemony Apricot Nectar, which sounds yummy. I may make it for
the local county fair, if I decide not to make Spirited Peaches.
There are a lot of canning cookbooks available. The Ball Blue Book
mentioned by others is a must. The new Complete Book of Home Preserving
also by Ball is a bit pricy ($20+ for the US version) if you're only canning
for this present, but worth it if you want to can a lot.
Try your library for this and other books.

I agree. I'm always thumbing through the "Ball Blue Book" looking for
something interesting to can. Also I may get something from the farmer's
market or a friend's garden and it will send me to the book to see what can
be done.

Check the newly published Ball Complete Book of Home Preserving (Amazon,
B&N, etc.) and keep checking the NCHFP site for the new edition of the
U of GA's "So Easy to Preserve," due any time now. The former has lots
of interesting recipes; I'm itching to get my hands on the latter.
If you're using "Grandma's Best (FITB)," make sure processing
information is current.
And come to rec.food.preserving. :-) The people there are
knowledgeable, friendly, and helpful.

(nectar of the gods) for jelly and bread. If you can thunk, it you can
probably can it.

Pick/buy "fresh" fruit when it is in season.
This means local - not some offshore imitation of fresh fruit.
In a 'large' crock pot layer the fruit as it becomes available adding enough
'cheap' brandy to saturate each added layer.
After the last harvest (depends on where you are located) give the whole
thing a stir and re-seal until late November.
Mid December stir it all again and pack into 250 ML jars. Distribute said
jars to deserving friends/acquaintances/family members.
Suggested serving - topping for ice cream, fruit pie, cheese cake, - the
list is endless.
This is a genuine old family recepie.
It is probably too late for this season but something to keep in mind for
the next.

I've never made this, but have read about it quite a bit. Every recipe I've
read until now calls for sugar to be added with each fruit. Does your
family not add sugar? If not, isn't the resulting product somewhat tart?
Not that tart is bad, mind you. I really like tart. But a lot of people I
know want their fruit toppings to be pretty sweet.

I suspect that the recepie goes back to a time when refined sugar was a
luxury. That plus most of the fruit was wild-gathered or home grown - not
the tasteless industrialized junk offered in today's marketplace.
Aside from being a much appreciated treat during the winter it was an
important source of nutrients that otherwise would have been destroyed by
other methods of preservation.
