You can successfully can cherries without sugar, but be warned -- pie
cherries lose a lot of color in the process. I canned some pie cherries in
water to use later in cherry upside down cake, and I ended up adding some
food coloring to the cherries before I put them in the pan.
If you want no-sugar jams, there are a few recipes in the new Ball complete
guide to canning book -- didn't capitalize because I'm not sure that's the
name of the book. They use white grape juice or apple juice concentrate to
sweeten the product, so although it is natural sugars it's not the natural
sugars present in the fruit..
I'll post a recipe if you'd like.
