My mother used to make potato pancakes from an old edition of the Joy of
Cooking. I don't have this cookbook, but I sure would like to have the
recipe so I can duplicate this taste from my childhood. Than you

Joy of Cooking
by Irma S. Rombauer & Marion Rombauer Becker
1963 edition
Potato Pancakes
About Twelve 3-Inch Cakes
This recipe demands mature potatoes.
Pare and grate coarsely until you have;
2 cups grated mature potatoes
Place the gratings on a muslin towel and
wring the towel to extract as much mois-
ture from the potatoes as possible. Place
them in a bowl. Beat well, then stir in;
3 eggs
Combine and sift;
1 1/4 tablespoons all-purpose flour
1 1/2 teaspoons salt
Add the flour to the potato mixture with;
(1 to 3 teaspoons grated onion)
Shape it into 1/2 - inch thick 3-inch diameter
patties. Saute in 1/2 inch or more hot fat.
Turn and brown the second side until crisp.
These are usually served hot with;
Applesauce, page 112
They are best, like all pancakes, served hot
out of the pan. If you must hold them un-
til all the batter is cooked, place them on
a rack above a baking sheet in a 200=BA
oven. Then serve all of them at once after
draining on absorbent paper to remove any
excess grease.
