Black Bean Salad with Mint
4 (14 oz each) cans black beans, drained and rinsed
2-4 Tbsp fresh-squeezed lemon juice (use more or less, to your taste)
1 Tbsp mint (fresh or dry), minced
1 cup crumbled feta cheese
Optional: 2 Tbsp olive oil (I omit this, better taste and texture without
it)
Mix all ingredients together in large glass bowl; cover, and chill for at
least 3 hours prior to serving.
