I use plain old granulated white sugar. I buy it for about 1/3 off the
rpice at the super market in a 50 lb bag at the cash and carry wholesaler.
Look under grocery wholesalers in the Yellow Pages. It's the place that
sells to mom and pop corner stores, small bakeries, and so forth. One 50
lb bag does all my wine and jelly, tea and cereal for most of a year.

Jam sugar has pectin already mixed in, William. In the US, Kerr did it
for a couple-three years -- probably 20+ years ago. Didn't stick in the
hearts and minds of US jammakers, though.

never bothered to find out how much pectin to use per xxx amount of
jam/sugar/fruit etc.

I can buy 'QuickSet' here in Ottawa. It's made by Redpath, the sugar
company. It has pectin in it. All you have to add is 3.5 cups of fruit.
It's easy and makes good jam, but obviously only in small batches. I've
never seen it in larger bags.....
