I posted this earlier this evening over in rec.food.cooking, then I
realised I should have sent it here first. Apologies.

Some years ago, when I was living in Cambridge, there was an Estonian
family living in the flat above me. We often cooked for each other. They
also had quite a few friends amongst the Polish expat community in East
Anglia. One old Polish woman gave them a jar of pickled rowan (European
mountain ash) berries. Tiina, the Estonian woman, cooked a great pork
dish and served the rowan berries as a sort of a relish. They were a
beautiful combination.

I've searched through any number of books and have trawled Google, but I
cannot seem to find a single recipe for pickling rowan berries. I've
already got several decent looking recipes for rowan jelly, so I'm not
looking for that. Have any of you come across the pickled berries? Do
you have a recipe lurking somewhere?

I'd find a recipe for something close and use that. When I couldn't
find a recipe for pickling Jerusalem artichokes I made one up based on
other recipes and it worked fine. I just used salt and vinegar, no spices
or anything. Having tasted rowan berries I think maybe spices would be a
good idea. :)

Do you think you could use a pickled blueberry recipe and substitute the
mountain ash berries? Or a pickled crabapple recipe?

Or how about this recipe I just found in Mother Earth News archives:

Pickled Chokecherries

Bring to the boiling point a pint and a half of vinegar into which have
been stirred half a cupful of brown sugar, a tablespoonful of whole
cloves and a dozen blades of mace. Boil all together for five minutes,
and set aside to cool. Have ready three quarts of chokecherries and put
them into glass jars. Strain the spices from the cold vinegar, and pour
the latter over the fruit, filling the jars to the brim. Seal at once.

Thanks, Bob. The pickled blueberries idea was a masterstroke. I've found
a recipe which might be just the ticket.
